This was a great and simple dinner. I put it on an onion bun with homemade coleslaw and served with a side of roasted red pepper potato salad. I plan to use the leftovers as a topping on a chopped salad tomorrow.

Ingredients for 6 servings

1 ½ boneless, skinless chicken thighs, trimmed of fat

1 ½ boneless, skinless chicken breasts, trimmed of fat (or use all thighs)

2 teaspoons chili powder

1 teaspoon sweet paprika

¼ teaspoon ground chipotle powder or cayenne

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

1 ½ cups barbecue sauce
