Ingredients for 1 serving

1 cup extra firm tofu, sliced, I used Vermont Soy

2 scallions, sliced thin

5 garlic cloves, whole and roughly chopped

1 Tbsp chopped fresh ginger

1/2 cup cooked edamame

1 tsp black pepper

3 Tbsp soy sauce

1 Tbsp olive oil

1 cup Boston lettuce leaves

optional: add mushrooms to saute

1 Tbsp agave syrup

1 lemon, juiced

salt/pepper to taste
