Ingredients for 4 servings

3 tablespoons butter

1 onion, diced

1/3 cup flour

1 quart stock from one chicken carcass (add water if you don’t have a quart)

1 teaspoon salt (or to taste)

1 bay leaf

1 tablespoon tomato paste (optional)

2 cups cooked chicken (or 20 ounces boneless chicken thighs, see post for instructions)

2 carrots large dice

2 ribs celery large dice

freshly ground black pepper

a squeeze of lemon to taste

1 cup milk

4 ounces butter (1 stick)

1 teaspoon kosher salt

1 cup flour

4 large eggs

1 tablespoon minced tarragon

1 tablespoon minced chives
