1 star anise

1.0 tsp coriander seeds

200.0g crème fraîche

SPICE MIX

125.0g butter , cut into cubes

300.0ml fish stock (from fishmongers and some supermarkets)

½ lemon

1 vanilla pod

2 salsify (or use artichoke hearts or salad potatoes)

1 banana shallot or ordinary, finely chopped

3.0 tbsp white wine vinegar or white balsamic vinegar

1.0 tbsp mustard seeds

1 bunch Swiss chard

1.0 tsp fennel seeds

4 seabass fillets, skin on

4 baby fennel , halved or quartered
