Ingredients for 4 servings

3 cup cold, cooked rice, chunks broken up so grains are loose and separate

1/2 can Spam, cut into small dice

2 x eggs, beaten

2 stalks green onion, minced

1 tsp minced garlic

1 tsp grated fresh ginger

2 cup fresh spinach leaves, finely chopped

1 tbsp Chinese rice wine - or dry sherry

2 tsp soy sauce -or fish sauce, 1 tsp

freshly ground black pepper
