12 Small Mushrooms

50 ml (1 1/2 tablespoon) Olive Oil

30 ml (2 tablespoons) Flour

100 g (3 oz) French Shallots (approx 10)

60 g (2 oz) Black Olives (I used Kalamata)

1 Orange

500 ml (2 cups) Chicken Stock

400 g (13 oz ) Whole Peeled Tomato (1 can)

10 ml (2 teaspoons) Crushed Garlic

2 Bay Leaves

125 g (4 oz) Bacon Bone
