50 ml (1 1/2 tablespoon) olive oil

30 ml (2 tablespoons) flour

100 g (3 oz) French shallots (approx 10)

60 g (2 oz) black olives (I used Kalamata)

1 orange

500 ml (2 cups) chicken Stock

400 g (13 oz ) whole Peeled tomato (1 can)

10 ml (2 teaspoons) Crushed garlic

2 bay Leaves

125 g (4 oz) bacon Bone
