generous thumb-size piece fresh root ginger

5.0 tbsp light soy sauce for flavour, 1 tbsp dark for colour

1.0 tbsp tomato purée

bunch spring onions , finely sliced

1 ½ tsp five-spice powder

1 red chilli , deseeded and finely chopped

5 garlic cloves

2.0 tbsp sugar , any type
