1/2 cup ice-cold water

1 large egg

1/2 cup flour

1/2 pound green beans, trimmed

2 small zucchini, cut in half lengthwise then 1/2-inch crosswise on a sharp diagonal

1/2 pound fresh shiitake mushrooms, stems removed
