1 sweet onion (Mayan or Vidalia), peeled and diced

2 cloves garlic, minced

1 lb ripe tomatoes, seeded and chopped or 1 can (14 oz) diced tomatoes

3 tbsp tomato paste

2 tsp fresh minced oregano (or 1 tsp dried oregano)

1 tsp sugar

Salt and pepper
