2 shallots, chopped

5 tablespoons extra virgin olive oil, divided

1 pound boneless, skinless chicken breasts, diced

1 medium butternut squash, peeled, seeded, and cut into 1/4- to 1/2-inch cubes

3/4 cup chicken broth

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Garnish: fresh sage leaves
