This looked so wonderful I had to try it with my garden blackberries. It turned out great, the crust held together despite my doubts. I did not have caster sugar and used granulated. If I made it again I would try increasing the sugar a bit and use one tsp lemon zest for 2 simply because I like more sweet than tart. Everyone thought it was an impressive looking/refreshing dessert!!

2 cup shortbread cookie crumbs

1/8 tsp kosher salt

3 tbsp unsalted butter, melted

6 cup blackberries, divided

1/4 cup granulated sugar

1 tsp lemon zest

2 tsp powdered gelatin

1 1/2 cup heavy, whipping cream

2 tbsp caster sugar

Seeds scraped from half a vanilla bean

2 tbsp sour cream

1 tsp powdered gelatin

2 tbsp milk
