3 venison sausages

sprigs of thyme and sea salt, to decorate

1.0 tbsp tomato purée

oil , for frying

TO ASSEMBLE

1 small celeriac , about 600g, peeled and chopped into large chunks

125.0g shallots or baby onions

50.0g butter

bunch rosemary , thyme and parsley

2.0 tsp clear honey

sprigs fresh thyme and rosemary

olive or sunflower oil

1 medium onion , chopped

1 carrot , chopped
