4 Asian eggplants (about 5 oz. each), rinsed

2 tablespoons olive oil

Salt and pepper

8 slices bacon (about 1/2 lb. total)

1 slender baguette (8 oz.)

1/4 cup pesto, homemade or purchased

2 Roma tomatoes (about 3 oz. each), rinsed, cored, and thinly sliced

1/4 pound thin-sliced jack cheese

2 cups arugula (about 1/8 lb.), rinsed and crisped
