8 ounces SCHARFFEN BERGER 70% Cacao Bittersweet Chocolate, chopped into small pieces

1 tablespoon sweet butter

1/3 cup milk

3 egg yolks, at room temperature

4 egg whites, at room temperature

1/8 teaspoon cream of tartar

1/3 cup sugar

Eight 6 ounce soufflé cups
