2 medium tomatoes, quartered (okay to use equal amount of cherry tomatoes, halved, or even canned tomatoes, in a pinch)

3 tbsp sherry vinegar (add more if you like it acidic)

1/4 cup olive oil

1/3 cup cubed stale bread

1 x roasted red bell pepper (roasted under broiler or over stove flame, skin removed)

4 x cloves garlic, chopped or crushed

8 x almonds, toasted and chopped

1/4 cup hazelnuts, toasted, skins removed (rub with damp towel), and chopped

1/2 tsp kosher salt

1 tsp smoked paprika

small pinch of red pepper flakes
