200 g of arborio risotto rice

1/2 large white onion, finely diced

50 g of unsalted butter

1/2 tbsp of garlic purée

sherry vinegar to taste

600 ml of Knorr vegetable stock

2 tbsp of truffle flavoured olive oil

1 1/2 red chillies, finely diced

1 tsp of olive oil

40 g of caster sugar

300 ml of balsamic vinegar

3 kg of tinned chopped tomatoes

1 bay leaf

1/2 tsp of thyme

1 1/2 tsp of cayenne pepper

1 tsp of smoked paprika

1/2 tsp of tabasco
