Ingredients for 5 servings

3 tbsps crumbled feta cheese

1 pkg cheese tortellini

1/4 red onion

1/2 tsp dried oregano

2 tbsps extra virgin olive oil

1 tomato

1/2 cucumber

2 cups spinach

1 tbsp balsamic vinegar

olive oil

Preparation

1.

Cut up veggies into small chunks

Mix extra virgin olive oil with balsamic vinegar and dried oregano in a small bowl

3.

Being a pot of water to a boil and add in fresh cheese tortellini. Store and cool for 6-10 minutes until desired texture

4.

Let cooked tortellini cool and mix all veggies, dressing, feta and pasta together.

5.

Leave in the fridge and serve when cold
