1 1/4 cups shelled edamame (that’s about 1/2 of a 1 lb bag)

1-1 1/2 tablespoons tahini

3/4 teaspoon minced garlic

3 teaspoons extra virgin olive oil, divided (I recommend this or this)

1 1/2-2 tablespoon lemon juice

1/4 teaspoon kosher salt, plus more to taste

a few cracks black pepper

3-4 tablespoons water

2-3 tablespoons diced roasted red bell pepper

toasted sesame seeds (plain or black)
