Remoulade Sauce (use 1/4 cup)

4 slices ripe brie cheese, chilled

3 small ripe tomatoes , halved

1 small Italian bread (12-inch)

1/4 lb thinly sliced rare roast beef

1/4 teaspoon Tabasco sauce , to taste

1 cup mayonnaise

2 teaspoons tiny capers , drained and chopped

salt , to taste

2 teaspoons whole grain mustard

salt & freshly ground black pepper, to taste

1 scallion , very thinly sliced (3 inches green left on)

1 tablespoon chopped fresh flat-leaf parsley

fresh ground black pepper , to taste

1 tablespoon Dijon mustard

1 teaspoon tarragon vinegar
