1/2 teaspoon saffron threads (optional)

zest and juice of 1 orange

zest and juice of 1 lemon

4 medium pears, peeled and bottom trimmed so they stand upright

16 thin slices prosciutto (about 1/4 pound)

1/2 head radicchio leaves

12 sprigs fennel greens (optional)

1/3 cup extra virgin olive oil

salt and freshly ground black pepper to taste
