4 cloves garlic, peeled, finely chopped

3 sprigs parsley, washed, finely chopped, stems and leaves

5 shallots, peeled, thinly sliced

1 tablespoon olive oil

1/2 pound mushrooms, shitaki or chanterelles, washed, thinly sliced, stems included

1 tablespoon butter

4 cups water or chicken stock

1/4 cup cream or half and half (optional)

1 tablespoon cooked rice per serving or cooked pasta (optional)

Sea salt

Freshly ground black pepper
