250 g beetroots , raw, peeled and finely grated

40 g self-raising flour

Topping

40 g plain flour

3 medium free-range eggs

1/4 teaspoon bicarbonate of soda

1/4 teaspoon salt

3 tablespoons clear honey

2 tablespoons maple syrup

250 g dark chocolate

150 g dark chocolate

1 vanilla pod , cut in half lengthways and seeds scraped out

50 g ground almonds

250 g light muscovado sugar

30 ml sunflower oil

1 teaspoon vanilla essence

3 tablespoons strong black coffee
