4 egg whites

1 stick butter, room temperature (1/2 cup)

1 ½ cups granulated sugar

1 tsp vanilla extract

1 tsp. pistachio (or almond) extract

1 cup ground pistachios

Green food coloring if desired

2 ½ sticks butter, softened

1 ¼ cup granulated sugar

1 1/3 cup half and half

1/3 cup flour

1 ½ Tb. champagne extract

½ Tb. vanilla extract

Red food coloring if desired
