Can make this with saffron (1 t) instead of smoked paprika. Can add fresh spinach at the end. This worked in place of the scallions and parsley, which I didn't have on hand.

This was delicious! Used the microwave method to peel the squash, added 2 c. of peas and a lb. of shrimp.

Ingredients for 8 servings

4 cups diced butternut squash

Olive oil

Salt

1 large onion, diced

2 leeks, white and light green parts only, halved lengthwise and thinly sliced

4 cloves garlic, minced

2 teaspoons smoked paprika

1/2 teaspoon red chili flakes

2 cups paella or arborio rice

1/2 cup white wine

One 15-ounce can diced tomatoes

1 quart vegetable stock

2 tablespoons chopped parsley leaves or green scallions to garnish
