It was ok. It was too bland and tart so I added tomatoes and avocado. I also added a little cayenne and a few drops of honey. It was a nice alternative to a salad.

Ingredients for 4 servings

4 zucchini, thinly sliced

zest from one lemon

juice from 2 lemons

1 1/2 tablespoons olive oil

salt and pepper (I like pink peppercorn for a bit of a color contrast)

fresh mint leaves (as little or as much as you like)
