1 onion , chopped

finely grated zest and juice 1 lime

250.0g basmati and wild rice mix, rinsed (we used Tilda)

4.0 tbsp Thai green curry paste (we used Bart's) , or use less for a milder taste

400.0g reduced-fat coconut milk

400.0g pack mini chicken fillets

handful coriander leaves, to serve

1.0 tbsp vegetable oil

2 red peppers , deseeded and cut into wedges
