500 g lamb breast

100 g Maldon salt (I used smoked)

50 g dark brown sugar

A few crushed garlic cloves

Thyme leaves

Black pepper

1 tbsp Dijon mustard

2 tbsp white wine vinegar

6 tbsp olive oil

1 clove of garlic, lightly squished

Salt and pepper

A few chunks of stale sourdough

1 egg per person
