6 green onions (scallions), whites and dark greens separated, sliced

1 medium carrot, julienned

1/2 cup shelled edamame

3 tablespoons minced ginger

2 garlic cloves, minced

4 ounces shiitake mushrooms, thinly sliced

2 medium eggs, beaten

3 cups cold, cooked long-grain brown rice

5 tablespoons low-sodium tamari or soy sauce

1 cup cooked, shredded chicken or tofu (dark meat is better if using chicken)
