2 cups whole wheat pastry flour (or spelt flour)

1 tsp fine grain sea salt

zest of one lemon

1/4 cup olive oil

scant 1/2 cup Cold water

3 x cloves garlic, minced

2 tbsp extra-virgin olive oil

scant 1 tsp red pepper flakes

pinch salt

1 can (14 oz) crushed tomatoes

1 1/2 cups ricotta cheese
