4 firm yet ripe Anjou or Bartlett pears, peeled, halved, cored and cut into slices 1/4 inch thick

Juice of 1 lemon

4 Tbs. (1/2 stick) unsalted butter

1/4 cup water

Grated zest of 1/2 lemon

1 cup pure maple syrup, preferably Grade B

1/2 cup finely chopped pecans

1 3/4 cups all-purpose flour

1 Tbs. sugar

2 tsp. baking powder

1/4 tsp. salt

1 3/4 cups milk

3 eggs, separated

6 Tbs. (3/4 stick) unsalted butter, melted and cooled

1/2 tsp. vanilla extract

Pinch of cream of tartar
