1 large shallot, diced

4 baby artichokes

1 lemon

1/2 cup white wine

Kosher salt and freshly ground black pepper

1 tbsp fresh thyme leaves

1 7-ounce jar roasted red peppers, well drained

½ cup walnuts

1 large garlic clove, chopped

¼ tsp. salt

Freshly ground black pepper to taste

2 tbsp. olive oil

1/3 cup grated Pecorino Romano cheese (you can also use Parmesan)
