I thought they were good! Subtly sweet. I used rendered bacon fat for some of the fat and my crumb couldn't have been better. I also substituted vinegar and baking soda for the egg and didn't seem to be worse off for it. Good base recipe to play with - especially with mix-ins like bacon and chocolate...

¾ cup unbleached all purpose flour

¾ cup whole wheat flour

½ tablespoon baking powder

¼ teaspoon salt

¼ cup cold butter

1 egg

2 tablespoon maple syrup

¼ cup milk

1 teaspoon vanilla

1 medium banana

⅓ cup walnut chunks

2 tablespoon sucanat for topping
