1 jar (12 oz) roasted red peppers, drained

1/2 tsp cayenne pepper

1 clove garlic

2 tbsp olive oil

1 tbsp sherry or red wine vinegar

1/2 tsp ground cumin

salt and black pepper to taste

4 mahimahi, sea bass, halibut, or snapper fillets (6 oz each)
