1/4 teaspoon freshly ground pepper, or to taste


1 large red beet

2 gold baby beets

2 Chiogga baby beets

1 white baby beet (if not available, substitute 1 gold baby beet)

1 tablespoon grapeseed oil

1 tablespoon salt

2 teaspoons pepper

1/2 bunch thyme

2 cups mache

1 ounce dry aged goat cheese such as Capricious (from My Time Dairy), shaved into thin shards
