Made this tonight as is and turned out great even in the high altitude. Might add a little vanilla next time to the batter to sweeten it a touch.

Ingredients for 8 servings

1 1/2 sticks unsalted butter

1 cup dark brown sugar

1/2 fresh pineapple cut crosswisepeeled, quartered lengthwise, cored and cut into 1/2-inch-thick slices

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 cup granulated sugar

1/2 teaspoon salt

1 large egg

1/2 cup milk
