  • 4-inch piece unpeeled ginger root
  • 14 medium shallots, peeled
  • 1 1/2 tsps salt
  • 2 (3-lb) chickens (preferably free-range for best flavor)
  • 3 whole scallions
  • 5 star anise
  • 2 cinnamon sticks
  • 1 piece (1 oz) Chinese rock sugar (may substitute 2 tsps palm or light brown sugar
  • 1 lb dried or fresh rice noodles
  • 1 bunch cilantro leaves
  • 1 to 2 bunch finely chopped scallions (white and light-green parts)
  • 1 to 2 bunch thai basil sprigs
  • 4 to 5 jalapeno peppers, seeded and cut crosswise into thin slices
  • Chili sauce, such as Sriracha
  • Freshly ground black pepper
