Ingredients for 8 servings

6 oz (about 6 slice) thick-sliced bacon, cut into ¼-inch dice

About 2 cup diced yellow onion (¼-inch dice)

¾ cup diced celery (¼-inch dice)

1 large carrot, peeled and finely grated (about ¾ cup)

1 Tbsp dried dill

2 tsp dried thyme

½ tsp freshly ground white pepper

⅓ to ½ cup unbleached all-purpose flour

3 cup bottled clam juice

½ cup dry white wine

2 dried bay leaves

3 cans (6.5 oz each) chopped clams, with their juices

1 cup half-and-half

3 cup diced cooked potatoes (¼-inch dice; any variety will work)

Salt and freshly ground black pepper
