Roasted And Wrapped Asparagus

This is a great dish to make with your little helpers, yet elegant enough to serve adults.

Ingredients for 4 servings

1 bunch asparagus

1 tbsp extra virgin olive oil

1 tsp salt

4 0z pancetta, proscuitto or Canadian bacon

pepper to taste

Preparation

1.

Preheat oven to 425.

2.

Rinse and trim tough ends from asparagus.

3.

In a large bowl, toss asparagus spears with olive oil and some salt.

4.

Working on a clean cutting board, wrap spears gently with the meat, one at a time, securing with a toothpick if necessary, and set on a cookie sheet.

5.

When all spears are dressed, grind some fresh pepper over them and place cookie sheet in the oven.

6.

Cook about 12 minutes, shaking pan periodically until spears start browning.
