250 g of Bosworth ash goats cheese log

25 ml of full-fat milk

1 gelatine leaf

50 ml of double cream

210 g of flour

240 g of butter

210 g of egg white

180 ml of glucose syrup

300 g of olive tapenade

2 beetroots, medium

salt to season

1 handful of micro cress

30 ml of balsamic vinegar, reduced to a syrup consistency

black pepper to season
