Ingredients for 2 servings

250 g spaghetti

1 yellow bell pepper

3-4 carrots

2 thumb-sized pieces of ginger grated

zest from lemon a little of its juice

1-2 tsp honey

2 tbsp cream cheese

60 g feta

olive oil salt pepper

1 can tuna i used followfish

Preparation

1.

wash the carrots and bell pepper and chop into fine ribbons (you can use a rasp, but watch out for your fingers)

2.

cook the pasta until al dente and keep some of the cooking water

3.

in a pan heat olive oil or butter, honey, lemon zest and grated ginger. now add carrots and bell pepper and cook for 2-3 minutes stirring occasionally

4.

add cream cheese and crumbled feta and season with lemon juice, salt and freshly ground black pepper

5.

now mix with the pasta and tuna and if needed add some of the pasta cooking water

6.

enjoy
