Spelt 100gr

Feta cheese 100gr

A handful of Sun dried Tomatoes finely chopped

2 spring onions

A handful of parsley

1 Aubergine cut into little cubes and pan roasted for 20/30 minutes at medium heat with 3tbs of oil.

Dressing: Extra virgin olive oil, Salt and pepper.
