1.5kg of cod fillet, skinless and boneless, diced

1 pinch of salt

4 shallots, peeled and finely chopped

8 garlic cloves, peeled and finely chopped

5 tbsp of flat-leaf parsley, chopped

5 tbsp of basil, chopped

3 eggs

250 g of breadcrumbs

10 burger buns

200 g of rocket, washed

3 beef tomatoes, sliced

120 ml of olive oil

1 pinch of black pepper

1 kg of tomato, washed and chopped

1 red onion, peeled and chopped

2 garlic cloves, peeled and sliced

2 tsp of thyme, chopped

150 ml of red wine vinegar

1/2 cinnamon stick

2 bay leaves

10 black peppercorns

50 g of caster sugar

1 tbsp of olive oil
