1/2 cup dark brown sugar, packed

4 sprigs fresh thyme (or 1/2 teaspoon dried)

4 sprigs fresh marjoram (or 1/2 teaspoon dried)

3 bay leaves

1 medium white onion, sliced 1/4 inch thick

1 head of garlic, cloves peeled and halved

2 teaspoons salt, approximately
