Ingredients

Vegetable Kofta Kebabs

2 large russet potatoes (about 1 pound), boiled, peeled and mashed

1/4 cup fresh or frozen peas

1/4 cup shredded carrot

1/4 cup shredded zucchini

2 tablespoons shredded cheddar cheese

1 to 2 fresh serrano chiles, chopped

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1 teaspoon salt

1/4 cup chopped cashews

1 tablespoon raisins

vegetable or canola oil for frying

The Batter

3/4 cup chickpea flour (see note)

1/2 cup water

curry sauce

8 whole cashews, or 1/4 cup cashew pieces

4 whole cloves, ground

1/8 teaspoon nutmeg

1/4 teaspoon cinnamon

1 large garlic clove, minced

2 tablespoons clarified butter or unsalted butter

1 large onion, grated

1/4 teaspoon turmeric

2 teaspoons paprika

1/2 teaspoon cayenne

1 cup water

2 cups heavy cream

2 tablespoons chopped cilantro
