2-3 large walla walla onions

1/2 bunch watercress , stems removed

4 sprigs fresh marjoram

2 tablespoons olive oil

1 head garlic , cloves peeled

1/2 bunch parsley , stems removed

salt and pepper

Repulse Bay Hotel butter

1 small onion , chopped

2 sprigs fresh tarragon

2 egg yolks

2 tablespoons lemon juice

5 fresh chives

1 lb butter , softened

1 tablespoon brandy

repulse bay hotel butter (recipe follows)

4 anchovy fillets , chopped coarsley

1 tablespoon dijon mustard

1 tablespoon madeira wine

4 stems fresh thyme

1 teaspoon worcestershire sauce
