I made this today and it was yummy! I used the curly kale and didn't have a fresh lemon - so I used dry lemon zest that I reconstituted in lemon juice. Also no walnut oil on hand - so I used olive oil. The goat cheese I had was with tomato and basil - but still quite tasty! Try it - you'll like it!!

Ingredients

2 cups salted water

1 cup quinoa

1 bunch lacinato kale, washed and chopped into 1" lengths

1 meyer lemon, zested and juiced

2 scallions, minced

1 tablespoon toasted walnut oil

3 tablespoons toasted pine nuts

1/4 cup crumbled goat cheese

salt and pepper
