  • 3 Tbsps raspberry vinegar
  • 3 Tbsps extra virgin olive oil
  • Kosher salt and pepper to taste
  • 2 avocados, ripe but firm
  • 4 ozs mixed salad greens
  • 3 cups medium-diced seedless watermelon
  • 4 ozs feta cheese, crumbled
  • 2 tsps chopped fresh chives
  • 1 Tbsp julienned basil
  • 1/4 cup toasted pine nuts or slivered almonds (optional)
