  • 1 red bell pepper
  • 2 cups cold cooked rice , scented jasmine or basmati rice , if possible
  • 1 tsp minced ginger
  • 1 green onion , white and green sections
  • 1 cup small cooked shrimp
  • 1/2 carrot
  • 1-2 Tbsp canned hot jalapeno pepper, to taste
  • 8 canned pineapple rings , drained
  • 1-2 Tbsp light soy sauce
  • 1/2 yellow onion , chopped
  • 2 Tbsps oil, for stir-frying (more or less as needed)
  • 1 tsp curry powder (or to taste)
  • 1 tsp minced garlic
  • sugar , to taste
