1 cup seeded, diced firm ripe tomato

3/4 cup finely diced white onion

1/3 cup fresh lime juice

1/3 cup fresh orange juice

1 small habanero chile, cut in half, seeds removed

1/2 cup finely sliced red radishes

2 tablespoons finely chopped fresh cilantro or mint leaves, or a combination

Salt to taste

Pork & avocado sauce:

1 small, ripe avocado, peeled, pit removed

1/2 teaspoon finely chopped serrano or jalapeno chile

2 tablespoons chopped fresh cilantro leaves

1/2 cup chicken stock, homemade or purchased, or water

Salt, freshly ground pepper

Drops of fresh lime or lemon juice

1/3 cup finely diced white onion, soaked in ice water for 30 minutes, then drained

8 thin-cut pork chops, 3-4 ounces each
