1 1/4 cups chicken stock

1 cup (4 ounces) shredded Cheddar cheese

1/2 cup (2 ounces) shredded Monterey Jack cheese

11/2 cups sour cream, divided

2 tablespoons diced pimiento

1 tablespoon dried parsley flakes

1 teaspoon paprika

1 (4-ounce) can sliced mushrooms, drained

2 tablespoons butter

2 (10-ounce) packages frozen broccoli spears, cooked and drained

2 cups chopped cooked chicken

10 (4-inch) crêpes*

*These can be purchased frozen, or use your favorite crêpe batter recipe.
